Names Winners

A pretty Chocolate Chip Cheesecake was just one of the many
tasty and beautiful dishes entered in the 2005 Hopkins County
Dairy Festival Dairy Food's Show. This creation was entered
by Patty Vaughn, in the Adult Cheesecake Division.

Hopkins County cooks "startled" the judges and made for some very close and difficult decisions during the 2005 Hopkins County Dairy Festival Dairy Foods Contest, on Saturday morning June 18th, in the Hopkins County Regional Civic Center. "This year brought out the best cooks in the county and the judges had difficulties choosing between entries," denoted Johanna Hicks, one of the organizers of the contest.

make between entries.

Bread Pudding
This recipe entered by Mrs. Katie Patterson, was judged "Best of Show"
in the 2005 Contest.

2 eggs
2 1/2 cups Milk
1 can uncooked biscuits
1/4 cup pecans, chopped
2 cups sugar
2 Tablespoons melted butter
2 Tablespoons vanilla

Preheat the oven to 325 degrees. Beat eggs. Add butter, milk, and vanilla, then sugar. Spray
a 9 x 13 inch cooking dish with cooking spray. Break biscuits into quarters and place in the
dish. Pour milk mixture over biscuits and pecans. Bake about 55 minutes. Cool and add the
following sauce:

Mix - 1/4 cup sugar
1/4 cup cream
1/2 stick butter

Melt the butter, add sugar and cream. Cook until the sauce is thickened and pour over
above Bread Pudding recipe.

Cheese & Fruit Kabob's
With Fruit Dip

This recipe was the winner in the Children's Division and is easy to
prepare and oh, so, so good and nutritious.

1 cup of washed grapes
1 cup of strawberries
2 cups (8 oz.) cubed cheese
Metal or wooden skewers.

If you are using wooden skewers, soak in water for 10-15 minutes. Place one grape
followed by one cheese cube, then one strawberry, etc., until skewer is filled.

Fruit Dip

1 (8 oz.) jar of marshmallow cream
4 ounces of sour cream
8 oz. cream cheese
4 heaping tablespoons of brown sugar

Combine all ingredients and serve with skewered fruit kabobs.

Chocolate Truffle Cheesecake

The following recipe was prepared by Mrs. Mary Ellen Hoybook and won the
first prize in the 2005 Dairy Foods Contest in the Cheesecake Division.

Crust:
1 1/2 cups chocolate wafer crumbs or Oreo Cookies
2 Tablespoons sugar
1/4 cup melted butter

Filling:
1/4 cup semi-sweet chocolate chips
1/4 cup whipping cream
3 (8oz.) packages Cream Cheese, softened
1 cup sugar
1/3 cup cocoa
3 eggs
1 teaspoon vanilla extract

Topping:

1 1/2 cups semi-sweet chocolate chips
1 cup heavy whipping cream
1 teaspoon vanilla extract
Whipped cream for garnish

Make crust by combining cookie crumbs, sugar, and melted butter in small bowl. Press on bottom of 9" spring form pan. Bake at 350 degrees for 10 minutes. Cool and reduce heat in the oven to 325 degrees.
Make filling: In a sauce pan, over low heat, melt chocolate chips; stir until smooth. Remove from heat, add cream and mix well. Set aside. In a large mixing bowl, beat cream cheese and sugar until smooth. Add cocoa and beat well. Add eggs; beat on low just until combined. Stir in vanilla and reserved chocolate mixture just until blended. Pour over crust and bake for 40 to 45 minutes until center is almost set. Remove from oven and let cool. Refrigerate overnight.

Make Toppping: In a heavy sauce pan heat cream until boiling being careful not to boil over. Pour over semi-sweet chips and let set for 1 minute. Wisk until creamy, add vanilla.

Garnish with whipped cream.
